This was one of those very fun what-do-I-have-in-my-fridge-that-I-need-to-get-rid-of dishes.
Here's what I used:
Cooked rice, Panda Express Mandarin sauce, eggs, vegetable oil. If I had some green onion, I would have loved to throw that in, too.
Editor's Note: This started because I had some leftover black rice from a sushi restaurant. It's very sticky and moist, so it's really good left over. Now when I make this, I pick up an order of black rice to go.
Here's what I did:
Add about 2 tablespoons of vegetable oil to a skillet on medium heat. Add the cooked rice and stir it a little bit. Pour in about 1/2 c of Mandarin sauce. Cook until it's heated through, about 5 minutes, stirring occasionally.
Once the rice is hot and would otherwise be done, crack an egg or two into a coffee mug and scramble them with a fork. Pour them over the rice. Let them sit on top for several seconds before you stir. Once they start to firm up, stir them into the rice. I like to gently fold them in so I have bigger egg bites. Once the eggs are done, you're done!
